Ide Champon

This isn’t Nagasaki Champon, it’s Saga! I definitely recommend people visit Ide Champon to get a dish piled with vegetables and topped with wood ear mushrooms, pink kamaboko, pork, and rich tonkotsu soup. The absolute mountain of vegetables piled onto the dish is what makes it stand out, and with the toppings, it just keeps on going. It has been over twenty years since I left my hometown, yet I still love, love, loooove this dish.

I recommend Ide Champon’s main location in Takeo City! There’s an unbelievable amount of vegetables piled onto their tonkotsu-flavored champon. I make sure to stop by this place every time I go back. There are so many vegetables your jaw will hurt to chew through them all, haha!

Saga Ramen

It’s tonkotsu ramen, but ramen in Saga is different from that in Fukuoka. Most shops here use pure tonkotsu broth and don’t combine it with seafood broth or add back fat. But it’s delicious! Who ever said pork bones were savory? Tonkotsu ramen in Saga is rich and creamy, yet there’s still something refreshing and light about it. There’s a quintessential Saga Ramen restaurant in Takeo City called Raikyuken.

The restaurant Gyoza Kaikan is famous for its “white gyoza.” They have a dish called “Moshi Moshi Ramen” that’s made with tonkotsu but doesn’t have an overpowering taste, so it pairs really well with gyoza. Patrons often sprinkle a generous amount of sesame seeds onto the dish.

These somen noodles have a history that goes back 400 years. The “Kami Somen” noodles are a popular gift in the summer. You can taste these high quality, crisp, and slippery somen noodles.
